Pumpkin Pizza Sauce
I always like to have ingredients for pizza on hand. My boy LOVES his pizza!!! But, I always struggled with making it healthy, guilt-free, and tasty. Until now. The pumpkin thickens this pizza sauce and gives it a great Vitamin A boost without tasting pumpkin-y. I use a pre-made crust from a local health food store, ½ cup of the Pumpkin Pizza Sauce, olive oil, fresh minced garlic, dairy free cheese, and vegan pepperoni (or sometimes plain pepperoni). If the pizza is for me or I have fresh ingredients on hand, I will add some diced red bell pepper and fresh basil too. Maybe mushrooms? Whatever! Heat the oven to 450 degrees then back down to 425 for baking. Bake at 425 degrees for 9-10 minutes then broil on high for about 2 minutes to make the pepperoni crispy! I always get my boy to help! He LOVES to make his own pizza! I freeze the other half of the sauce for another day! It is perfect for a quick meal when I roll in late from a flight.

Pumpkin Pizza

Pumpkin Pizza Sauce

½ cup pumpkin puree (not pumpkin pie mix)
1 8oz can tomato sauce
1 tsp garlic powder
½ tsp crushed red pepper
½ tsp oregano
½ tsp marjoram
½ tsp basil
¾ tsp salt
1/ tsp sugar

Makes between 1 and 1 ¼ cups sauce. Enough for two 12 inch crusts.
